At the helm of Sushi Sho is Keiji Nakazawa, a master sushi chef who was among the first in his field to look beyond Japan, bringing his craft to Honolulu in 2016 and to New York in 2024. His unique approach alternates between delicately prepared small plates (tsumami) and perfectly timed sushi bites (nigiri), blending tradition with a spirit of freedom.

Ingredients are drawn from the blessings of this land: fresh vegetables nurtured by the pure waters and climate of Fuji, and seafood sourced from Suruga Bay. With meticulous preparation and techniques of fermentation and aging, each dish quietly reflects the changing seasons, speaking to the senses through craftsmanship.
