At the helm of Sushi Sho is Keiji Nakazawa, a master sushi chef who was among the first in his field to look beyond Japan, bringing his craft to Honolulu in 2016 and to New York in 2024. His unique approach alternates between delicately prepared small plates (tsumami) and perfectly timed sushi bites (nigiri), blending tradition with a spirit of freedom.

A return to the essence of sushi—not only the “omakase” experience but also the joy of “okonomi”, choosing what delights you in the moment. Revered among sushi artisans and beloved by connoisseurs around the world, Sushi Sho continues to inspire the industry itself.

Carrying forward this legacy, FUJI TAKUMI finds its home within GORA KADAN FUJI, offering sushi found nowhere else—crafted in harmony with the nature of Mount Fuji. Ingredients are drawn from the blessings of this land: fresh vegetables nurtured by the pure waters and climate of Fuji, and seafood sourced from Suruga Bay. With meticulous preparation and techniques of fermentation and aging, each dish quietly reflects the changing seasons, speaking to the senses through craftsmanship.

At Fuji Takumi, time itself becomes part of the experience. As a sushi counter within a ryokan, it is designed for unhurried enjoyment—guests are free to relax, savoring sake, wine, and sushi without watching the clock. Begin with a curated half-course, then follow your own desire—whether continuing with nigiri or lingering over exquisite pairings of tsumami and sake.

Signature offerings include specialties deeply rooted in place: Akafuji trout, raised in the pure waters of Gotemba, matured for three days and transformed through kombu curing; Kasugo-dai adorned with golden egg yolk vinegar; and the playful ohagi—a handroll of minced tuna, scallion, and pickled daikon, named for its resemblance to a traditional Japanese sweet.
