At Gora Kadan, the origin of our cuisine lies in kaiseki—not merely as a style, but as a philosophy that embodies the attitude and spirit with which we approach cooking.
Our cuisine does not seek simply to satisfy hunger. It is an offering of harmony, beauty, and flavor—a mindful celebration of nature’s rhythms, drawn from the streams, springs, and mountains of this land. We are committed to sourcing ingredients not from places defined by human borders, but from terroirs shaped by nature itself.

At Kaiseki Kadan, we listen to the unseen forces of this land—its earth, its waters, and its climate—and elevate them onto the plate. Snowfall atop Mount Fuji takes decades to filter through stone and soil before emerging as the pure, underground spring water we draw upon. This pristine water forms the foundation of our dashi, imbuing every dish with the living essence of the land itself.

Our ingredients—rice, wasabi, root vegetables—are likewise nurtured by these same waters. Rather than following conventional notions of origin, we seek ingredients rooted in the natural harmonies of the Fuji mountain range, honoring the true terroir of this place. Rather than “choosing” ingredients, we see it as being chosen by the land to work with its gifts.

Dialogue with local producers is equally at the heart of our craft. We listen attentively to the daily work, devotion, and ingenuity of the people who cultivate this land, and we search for the techniques that best honor their efforts. Through this process, every dish at Kaiseki Kadan carries the quiet stories of the region—an expression of the ongoing cycle of nature, people, and place.

While grounded in tradition, Kaiseki Kadan also embraces innovation. Game meats and select ingredients from abroad are incorporated with intention, enriching our repertoire while remaining true to the essence of kaiseki: the pursuit of harmony between nature and humanity, beauty and spirit.

Inheriting the lineage of kaiseki, yet evolving alongside changing times and global perspectives, we continue to refine our craft through study, experimentation, and a heart of hospitality. This is kaiseki that reveals Japan to the world—the cuisine of Gora Kadan.

Counter Kappo

A Singular, Sensory Encounter

Located within the Kaiseki Kadan, our Counter Kappo offers a more liberated, immersive culinary experience while honoring the spirit of kaiseki.
The steam rising from freshly shaved katsuobushi, the fragrance of dashi, the crackle and scent of grilled eel—every element of the preparation unfolds before you, becoming part of the meal itself. From sight and sound to taste and fragrance, this is dining experienced in its fullest, most immediate form.

Each dish is served at the perfect moment, attuned to the mood, the season, and the flow of conversation. In this intimate setting, freed from rigid formality, you are invited into a one-of-a-kind encounter—an ichigo-ichie experience born only of this time, this place.

Our ingredients are chosen with uncompromising care: wasabi from Amagi, rice from Gotemba, and seasonal blessings unique to the Fuji region’s natural cycles. Every preparation is designed to draw out their fullest potential.

*Age restriction: 18 and over. If you wish to dine at our counter kappo with guests under 18, a private room may be arranged depending on availability and party size.
