Listening intently to the voice of each ingredient, honoring every step of preparation with care, and weaving modern values—such as sustainability and local sourcing—into its cuisine, Kanda has continually redefined the essence of contemporary Japanese dining. Every element, from the selection of tableware to the design of the space, is meticulously considered, creating an experience that resonates deeply with all five senses.

Now, for the first time, Kanda brings its philosophy to the world of teppanyaki, unveiling a new chapter at Gora Kadan Fuji. This bold step beyond the confines of traditional Japanese cuisine stems from both a spirit of culinary curiosity and deep respect for the natural abundance of Mount Fuji’s surroundings.

Even in this new domain, Kanda’s unwavering principle remains: to understand each ingredient’s nature and draw forth its fullest potential. The centerpiece is a carefully curated beef from Asanuma Farm in Kagoshima, developed with the involvement of Chef Kanda himself. This rare breed, a cross between Wagyu and dairy cattle, offers a perfect balance—tender, flavorful meat with fine marbling that allows the pure savor of red meat to shine through. Raised on a diet of house-made feed and tea leaves, this beef is the culmination of years of refinement: a discovery born of the simple desire for “the meat we truly want to eat today.”

Yet, this teppanyaki experience goes far beyond the expected. It begins not with beef, but with elegant starters—purple sea urchin from Shiretoko, delicate oysters harvested before their first year, and other select ingredients personally endorsed by Chef Kanda himself. Every course reflects the same meticulous attention as the main establishment, presented as refined appetizers that set the tone for a culinary journey.
